Hi all,
I'm delighted to report that this default folder issue is fixed with SABnzbd v4.0.1.
That is, when updating to the latest version of SABnzbd, the user-set locations for the complete/incomplete folders are not changed.

A quick follow-up for anyone interested. The latest update to SABnzbd (v3.7.2) still reverts the complete/incomplete folders to a location I don't use. Thanks for letting me know. It's not a huge issue as hitting "Play/Continue" always completes the download. Strange that it only happens intermittently.
