I do get this error in SAB now: " Cannot reach the SABHelper service"
Seems to work though so ignoring it for now.

It should never be in those locations. SABnzbd will use the base-location of where it is started, since you used NSSM that set the base-location to the System32 folder. Sabnzbd loses settings occasionally
Every once in a while my sabnzbd loses its settings and I have to set everything up again as if it were a fresh install. I'm not sure what made this happen in the past but this time it happened right after a major windows update. Any idea how to fix this?

I've continued to test using the same nzb I had a massive problem with a few days ago. The last three times the download has completed and there have been no missing parts. Tried two more times, the first one needed only 8 more blocks for repair, the second was successful.

I made the change in config but still missing 184 blocks in par2. I doubt the change made the difference, this is just how it usually works - different missing parts every time. The 1100+ missing blocks earlier was the worst I'd seen.

Finally got this to work by forwarding a port in my router. I guess that was common sense but it took me a good 45 min to realize the problem.
Is this the correct method? I dont want to open myself up to more risks than I have to by opening ports.
