ALso, i find it difficult to edit remove or add new ones

It seems something went wrong with your settings file.
Maybe you can shutdown sabnzbd, then open the ini file (location is listed on first page of Config when sabnzbd is still running).
Then you can manually remove the categories under the [categories] section.
Do you maybe have Sorting enabled?

I have sent Sab.ini file via eMail so you can see if there are any erros.

Ah, you have to click the option below the login: "no thanks, continue to view".

- First remove the bad categories by editing the sabnzbd.ini as described above
- Then change the categories, you do not need the quotes around the terms, this probably messes things up a bit.
You can also just place the [categories] section here on the forum, so we can see if it's correct. To make sure: before editing, always shutdown SABnzd first.
