I know it sounds silly, but having a clean "complete" folder with Movies, TvShows and Anime folder, and then having a download without category which extracts right into the complete folder is something that really disturbs me. Wouldn't it be better do add a "default" or "none" or "" category which i can specify another subfolder e.g. "undefined stuff"?
That way the complete folder would be much cleaner
What do you think?

Forgive me if I dont understand you correctly, but what's wrong with adding the folder you want into the Blank catagory?

You could have a folder D:\complete\undefined then set your Completed Download Folder: to D:\completed\undefined.
If you use full paths for your catagorys ie D:\complete\TV and D:\complete\movies etc, all your catagory stuff will be moved leaving the default in the undefined folder.
Make sense?
