I want to have multiple folders that are regularely watched for NZB-files, which then shall be automatically downloaded. How can I define more than one folder in Sabnzbd for that purpose?

You cannot.
The only thing you can do is create multiple sub-folders to indicate different categories.

would it be possible to implement that? I have a WHS, and would like to watch one shared folder on the server, and multiple local folders on my machines, when they are running. I believe this would be a great feature, which wouldn't break too much if implemented, or are there reasons against that?
Besides, the german translation of the user interface suggests that this is already possible, it says:
"Überwachte Ordner:
Ordner, die auf neue NZB-Dateien überwacht werden sollen."
which means
"Watched Folders:
Folders to monitor for .nzb files."
Since plural is used, I tried to configure several folders, but was unsure which delimiter to use to seperate several folders in one line (, or ; )

The feature would be for a very small group of users,
while requiring additional testing effort.

the propper tranlastion should look like that, if there is only one watch-folder:

You can make your own categories , with different settings / scripts / folders to save to.
I would say this has all that is needed

sounds interesting, can you please explain how to exactly do this? Since my desired watch folders reside on different computers in my home network.

You can use a sync tool like syncback pro or synctoy to grab files from your various systems via regular CIFS share and place them in the watch folder of your WHS.
Tell the sync tool running on your WHS to sync \\random-pc\folder-where-you-DL-nzbs to the local watch folder. I use this technique for backing up all my important files on workstations and laptops to my server which then backs it up via Carbonite.
