I tried throwing a couple of email addresses into the text box, separated by a semi-colon. No dice. Couldn't find anything in the wiki. Is there a way to send a notice to multiple recipients?

Yes, but only using the templates, described here: http://wiki.sabnzbd.org/email-templates
The idea is that you make multiple copies of the template
and hard-code the recipient in them.
It is a bit clumsy and we might add handling multiple recipients in a later release.
BTW: If you use gmail it's easy to set up a filter in gmail that forwards the message to multiple addresses.
