I'm new to this.
Trying to add nzbs, but get error message:
'FOUT: Aanmaken /volume1/downloads/incomplete/FOOD_INC mislukt'
What do I do wrong ?

Access rights problem.
Are you sure that /volume1/downloads/incomplete exists and that SABnzbd has access rights?
Which operating system do you use and what kind of drive is /volume1?

Volume1 sounds like a Synology nas

looks like my SABnzbd doesnt have rights to the dir.
Changing it to c:\ works.
How do I give SABnzbd the correct rights to save directly to my NAS.

Yes, it is a Synology DS211j.

Does SABnzbd on you Windows system?
If so, you cannot use internal NAS paths.
You need to use a path like \\mynas\sharename
