I set my finished files to be unrared and moved to my desktop. However, all my .rar files on the desktop also get unrared.

I'm not sure when this started happening. Does putting an asterisk in the categories folder path cause this?

Yes.
Combining the desktop as destination with the asterisk, is a bad idea.
