It's already using low CPU priority.
However, these programs tend to use the disk very intensively.

I personally use ionice to make sure par2 and unrar don't ruin my download time. I simply added an alias to my user running Sabnzbd :

I'm running into the same issue, the post-processing is very system demanding so I looked around for the ionice solution, but I can't find that it's been ported to OS X in, for me, an easy way.
Another solution for this atleast for me is to have different states or modes. One for downloading, one for processing and one for both. The downloading process really don't take much effort regardless that I'm rating 2536.14 KB/s but the post-processing almost kills my system. So for my home system I would prefer to download 24/7 but only post-process during day and late nighttime.
Can this be done by some scripting perhaps?

This feature is not available, we'll look into it for a future release.
Now, there's only "pause downloading during post-processing".
